Macaroni Corn Casserole


I’ve got a great recipe to share with you. With summer here, I’m sure you will soon be invited to a number of BBQ’s and potlucks. I’ve got an easy recipe that is sure to be a hit at your next party. I got this recipe for Macaroni Corn Casserole from my mother-in-law, Pat. This is great for entertaining because you can prepare it ahead of time, set it aside and throw it in the oven when you’re ready.

We served our mac and corn with hamburgers and Brussels sprouts.

Easy Macaroni Corn Casserole

  • 1 can of golden corn, cream style

  • 1 can golden corn, whole kernal

  • 1 C. macaroni pasta

  • 1/2 C. Velveeta Cheese

  • 1 stick of unsalted butter

  • casserole dish with lid

Preheat oven to 350 degrees. Add corn, cream corn, and macaroni to greased casserole dish. (Don’t drain the corn, you need the moisture to cook the pasta) Stir together. Top corn mixture with slices of Velveeta Cheese. I recommend 1/2 – 1 C. Whatever floats your fancy. Place stick of button on top and cover with lid. Cook for 30 minutes. Remove from oven and stir casserole. Cook additional 30 minutes. Stir and let cool for 10-15 minutes. Serve.

*This can sit on the counter for several hours before you are ready to cook. Great if you have company coming later and don’t want to have to worry about cleaning dishes.
