Bacon Mac & Cheese

I’m not exaggerating when I say that this is the absolute best mac and cheese you will ever taste. The best part – it’s not that bad for you. I used absolutely NO BUTTER, skim milk and whole wheat pasta.

Healthy Bacon Mac & Cheese

  • 3 1/4 Tsp salt, divided

  • 12 oz strozzapreti or penne pasta (I used whole wheat bow-tie pasta)

  • 4 Tsp all-purpose flour

  • 1 1/2 cups skim milk, divided

  • 2 C finely shredded sharp cheddar cheese, divided

  • 1/2 C sliced green onions (I used onion salt instead because my husband hates onions and I try to be a good wife)

  • 1 Tsp hot sauce

  • 1/4 Tsp pepper

  • 2 slices center-cut bacon, cooked and crumbled

  • Cooking spray

Preheat broiler. Bring 6 quarts water and 1 Tbsp salt to a boil. Add pasta; cook according to the package. Drain.

I LOVE BACON! I made sure to get an extra thick slice for this recipe. Yumm. Cook your bacon and crumble into pieces.

Combine flour and 1/2 cup milk in a saucepan over medium heat. Gradually add 1 cup milk, bring to a boil. Cook 1 minute, stirring constantly. Remove from heat, let stand 4 minutes or until it cools to 155 degrees. Stir in 1 1/2 cups cheese. Add 1/4 Tsp salt, onions (salt), hot sauce, pepper, and bacon; stir.

Add pasta; toss. Spoon into a 2-quart broiler-safe dish coated with cooking spray; top with 1/2 cup cheese. Broil 7 minutes.
