Brownie Chunk & Chocolate Chip Cookies

That’s ok – because NOW YOU DON’T HAVE TO!

I have a work meeting tomorrow night and needed a new tasty cookie recipe to share. I went to my favorite blog for sweet treats, Picky Palate (LOVE HER!) and found this recipe.

Now, back to the cookies, I mean brownies, I mean Cookies…. Let’s call them coonies. These coonies are pretty gosh darn fantastic – if I do say so myself.

Brownie Chunk & Chocolate Chip Cookies

  • 1 cup (2 sticks) unsalted butter, softened

  • 3/4 cup granulated sugar

  • 3/4 cup packed light brown sugar

  • 2 large eggs

  • 1 tablespoon vanilla

  • 3 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon kosher salt

  • 1 cup chocolate chips

  • 2 cups cubed prepared brownies

Make your brownies. I used Pillsbury brand, but you can use whatever you like.

Preheat oven to 350 degrees F and line a large baking sheet with parchment or silpat liner.

Place butter and sugars into the bowl of a stand or electric mixer, beating until light and fluffy. Add eggs and vanilla, beating until well combined. Place flour, baking soda, and salt into a large bowl, mixing to combine. Slowly add dry ingredients to wet ingredients along with chocolate chips and brownie chunks until just combined.

Your cookie batter is going to get very dense feeling in your mixer. Just keep mixing – it will all turn out as it should Now, marvel at how good the dough looks. I could freeze this and eat it right now – I’m just saying.

Using a medium cookie scoop, scoop dough onto prepared baking sheet about 1-inch apart. Bake for 9 to 11 minutes until cooked through. Let cool for 5 minutes before transferring to cooling rack.

Now – pour yourself a nice cold glass of milk. Take bite of croonie. Take swig of milk. Now repeat until croonie and milk are gone.

Repeat tomorrow

(Makes 3 dozen chocolate coonies)
