Look how cute?!
If you have a little one's birthday party coming up and they LOVE trucks and diggers, this is the perfect cake for you to make. I can't tell if Teddy was more excited about the fun diggers on top or the actual cake.
Chocolate Truck Cake
1 box of Devils Food Cake
1 package of chocolate pudding
1/4 C. water
1/3 C. oil
1 C. light sour cream
4 egg whites
2 cans of your favorite chocolate frosting (I went with Pillsbury Chocolate Fudge – I find it totally acceptable to go with store bought)
1/2 C. mini chocolate chips (not pictured)
1 package of Oreos
These little trucks/diggers (or any other truck/car you'd like to decorate with)
Preheat oven to 350 degrees.
Mix together the cake mix and chocolate pudding. Then mix in water and oil. Finally, add in one cup of sour cream and 4 egg whites. Mix well until all ingredients are mixed in and batter becomes thick.
Divide evenly into 2 (8-9 inch) cake pans that have been generously sprayed with baking spray. Bake according to the directions on the back of the box. Let cool completely, loosen sides with a plastic knife then remove from pans. Place bottom layer onto a cake stand, spread with your favorite chocolate frosting and sprinkle with chocolate chips. Place top layer of cake on top of chocolate chips. Frost remaining top and sides of cake with frosting.
While cake is baking, remove cream center from each Oreo. Take the cookie part of the Oreo and add to large plastic ziplock bag. When you've separated all the cookies, take a rolling pin and crush cookies into tiny pieces. You want them to be small. If you want to include a number on the top of your cake, take wax paper and cut them into the number you want to display. Place the wax paper on top of the cake. Add cookie crumbles all around the cake. Once cookie crumbles cover the entire cake, remove the wax number. Take a fork along the frosted number to create texture. Finish by garnishing the cake with the tiny trucks.
