Chicken Taco Bake


I found a fun, new recipe for Taco Tuesday night. Best thing is it is weight watcher approved and my family LOVED it. I love everything in here and the crunchy chips at the bottom make the perfect combination. Enjoy!

Chicken Taco Bake

24 tortilla chips, plus more for serving

Olive Oil spray

1 onion, chopped

1 Tbsp. minced garlic

1 lb. ground chicken

1 package taco seasoning

1 can black beans, drained

1 C. salsa

1 C. shredded cheddar cheese

Optional: sour cream, guacamole, jalepenios for topping

Large baking dish

Heat oven to 350 degrees.

Coat skillet with olive oil in a large skillet. Add onion and garlic and saute until soft. Add ground chicken and taco seasoning. Cook, breaking up meat with a spatula, for about 5 minutes, until chicken is cooked. Add beans and salsa. Mix well and continue to cook until salsa thickens.

Line the bottom of a large baking dish with tortilla chips, pressing down on them lightly to break them into bite-sized pieces. Spread the meat and bean mixture over the chips and top with cheese. Bake for 20 minutes or until cheese is melted and gooey.

Scoop up with additional chips if desired. Top with your preferred toppings.
