Ice Cream Sandwich Bar


Happy 4th of July everyone! We had such a great family day. Parades, lunch with neighbors, backyard swimming and BBQ with friends who are family finished by fireworks in all directions at home. On top of all the fun, we enjoyed all the delicious food the 4th brings.

I was in charge of dessert and I wanted something fun, delicious and summery. An ice cream sandwich bar seemed like the best option. Everyone could make their own combo and enjoy the best thing about summer: ICE CREAM!

Ice Cream Cookie Bar

  • Assorted cookies (I had mini chocolate chip cookies for the kids and brownie cookies for the adults)

  • Assorted ice cream flavors (we had vanilla bean, chocolate and a cookie swirl)

  • Toppings: mini M&M's, crushed Oreos, mini chocolate chips, sprinkles, etc.

Have your guests assemble their own cookies. Let your ice cream melt a little so it's easier to scoop. Place ice cream on the bottom cookie and top with another cookie. For the kids, I rolled the visible ice cream on the sides with the toppings. You can also create an open face ice cream cookie dessert. The options are limitless.
