A couple of weeks ago we had friends over for a mexican feast. We did it up right with all the fixings. I wanted to make a little something extra for the taco’s so I whipped up a little mexican corn and pepper side.
(*Sorry the lighting is so crappy for my photos. It’s winter and with that brings terrible lighting at the dinner hour.)
This was a quick, super easy side to make and added a little something extra to the taco’s.
Mexican Corn & Pepper Side Dish
1 Tbsp. olive oil
1 Tsp. minced garlic
1/2 green pepper
1/2 onion
1 1/2 C. frozen sweet kernel corn
pinch of salt and pepper
1/4 tsp. cumin
Start by sautéing the garlic in olive oil over medium heat until garlic is golden brown. Add onion to pan. Give it a quick stir and let it caramelize. After a couple of minutes, add green pepper. Cook for another 2-3 minutes. Add corn, stir and let cook until corn is warmed through, another 3-4 minutes. Season veggies with salt, pepper and cumin. Serve as a side or on top of your tacos.
