My sorority sister made this delicious dinner for us a while back and it's been a staple in our house ever since. It's fresh, healthy and SO SO easy!
I love the tangy flavors - they go together perfectly!
Balsamic Tomato Baked Chicken
1 C. Cherry Tomatoes
4-6 chicken breasts (2 lbs.)
Salt & Pepper
1 bottle of reduced fat Balsamic dressing
Brown minute rice
Preheat oven to 400 degrees.
Spray baking dish with olive oil spray. Prepare chicken by seasoning with salt and pepper. Place in baking dish. Top with cherry tomatoes. Pour dressing over chicken and tomato mixture. Make sure everything is coated evenly.
Bake for 40-50 minutes (or until chicken is cooked through). Half way through, take dish out of oven, and spoon sauce on top of chicken to keep it from drying out.
Meanwhile, prepare rice according to the directions on the package.
To serve, spoon rice on plate. Top with chicken, tomatoes and sauce.
BOOM - it's that easy!
