I'm always looking for yummy, healthy snacks to enjoy at work. I usually need a pick-me-up around the 3 o'clock hour.
I found this recipe a couple months ago and was excited to try them out. You know I love peanut butter so I had high hopes this would be a keeper. PLUS - it doesn't require baking and only needs 5 ingredients. It doesn't get much simpler than that!
These little bites are so easy to make - perfect for Sunday when I meal-prep for the week ahead. Just keep them in the fridge and gobble them up as you like.
Here's what you'll need:
Peanut Butter Energy Balls
(recipe inspired from here)
2/3 C. creamy all natural peanut butter
1/2 C. dark chocolate chips
1 C. old fashioned oats
1/2 C. ground flax seeds (make sure your flax seed is ground!)
2 Tbsp. honey
Combine all 5 ingredients in a medium bowl and stir to combine. Place in refrigerator for 15-30 minutes. The dough will be easier to roll.
Roll into 12 bite-sized-balls. I used a medium cookie school to help measure out the balls. Store in fridge up to 1 week.
*Special note: I forgot to grind up my flax seeds. Make sure you do that so they are easier to eat. The first time I made this recipe (pictured above) - I forgot and it was super obnoxious trying to eat while the seeds got stuck in my teeth. They were much better the second time around whenI used ground seeds. :)
