Remember when I stayed at Jacque and Jim’s last weekend and we made these?? We’ll we also made some kick-*** marinated chicken.
Steve, my friend Chelsey’s husband is great in the kitchen. We asked him to take what we already had and make up a marinade for the chicken kabobs. He sprinkled together a little of this, and a little of that into a bowl and came up with a delicious marinade, I just know you’ll love.

I give you: Steve’s Chicken Marinade!

Steve’s Chicken Marinade
4 boneless chicken breasts
1/4 C. olive oil
Juice from 1/2 lime
3 Tbsp. diced onion
3 Tbsp. diced red pepper
1 Tsp. Garlic Salt
1 Tsp. Oregano
1 Tsp. Pepper
1/4 C. shredded parmesan cheese
Cut chicken breasts into small, bite size pieces – or whatever size you wish to put on your kabob. Stir the rest of your ingredients together in a bowl. Add chicken to marinade and let sit for at least 25 minutes. Skewer kabobs and grill over medium heat 6-8 minutes. Turn and then cook for an additional 5, or until cooked through.
