*Bonus – these roasted red pepper skewers are about the easiest thing you could possibly make in the kitchen.
We had friends over for Sunday night dinner this past weekend and I was in need of great side that would go well with hamburgers. These were easy to prepare ahead of time and they didn’t take a lot of clean up.
I absolutely love bell peppers and these are a fun way to prepare them. Plus – they are so pretty on the plate!
Roasted Red Pepper Skewers
Start by rinsing baby peppers under sink. Skewer 3-5 peppers per skewer, depending on how big the peppers are. Lightly brush olive oil on peppers, both front and back. Lightly season with salt and pepper. Grill skewers over medium heat for 4-5 minutes on each side. Enjoy!
