BLT Pizza

I made you something.

It’s got bacon in it, so I know you’re going to love it.

I’m seriously in love with this pizza. Ripe tomatoes, fresh spinach and did I mention bacon?

BLT Pizza

  • Whole wheat crust (Trader Joe’s, Whole Foods, Gateway, etc)

  • 4-5 slices of Thick Cut Bacon

  • 2 Tbsp olive oil

  • Grated parmesan cheese

  • Italian seasoning

  • 2 C. of shredded mozzarella cheese

  • 15-20 grape tomatoes, quartered

  • 1 C. spinach

If you buy your pizza dough like I do (no shame!), make sure you let it sit out for at least 30 minutes before you’re ready to assemble pizza.

Start by cooking your bacon. To avoid a mess I like to cook it in the microwave, but feel free to cook in a pan. Pat off grease and cut/crumble into small pieces.

Dice up grape tomatoes into quarters. Set aside.

Preheat oven to 375 degrees. Now it’s time to assemble the pizza. Roll out your pizza dough into the crust. (Make sure that you let your dough sit out to room temperature – it will make it easier to work with.) Mix 2 Tbsp oil and 1 Tbsp grated parmesan cheese in small dish. Spread oil mixture on crust using a pastry brush. Sprinkle with italian seasoning.

Now it’s time to layer on the good stuff. Sprinkle pie with some mozzarella cheese, leaving some for the very top. Next layer on your grape tomatoes and bacon. Finally top off with the rest of your cheese.

Bake for 20-25 minutes. I like to finish the last couple of minutes on broil to make sure the cheese gets nice and golden brown. Let pizza sit for 5 minutes. Top with spinach.
