Garlic Chicken and Snap Pea Skillet

Friends, it feel so nice to be back. I know I’ve been absent lately but things are settling down.

Some exciting highlights…

1. I finished my capstone!! Woo-Hoo. 6 weeks, 119 pages + Supplemental Guide and a 90 minute presentation later, I’m excited to finally start my summer.

2. Birthday Celebrations! Last weekend Tim and I helped our good friends turn another year older. I love summer nights with friends – not much can top it.

3. 4th of July Shenanigans. We had a great time celebrating Independence Day. Tim and I enjoyed two firework displays on our downtown pedestrian bridge. I tell ya, the I-Cubs can put on a show. We had friends come to town on the 4th. We enjoyed a fun mid-day picnic with a view, an entertaining paddle boat ride and live music at Jasper Winery. We finished the night with a home-cooked meal and wine on a patio. Not too shabby if you ask me.

To celebrate being back, I’ve got a great meal to share with you. This meal is great because it only takes three ingredients and 1 pan. Plus, it’s healthy and fresh. I call it, Garlic Chicken and Snap Pea Skillet.

Garlic Chicken and Snap Pea Skillet

  • 1 bag of fresh snap peas

  • 1 lb. chicken breast

  • 2 squares of garlic and herb flavored Saute Express

Start by melting your saute express cubes in a large saucepan over medium heat. Give it a stir once it starts to melt. Meanwhile, cute chicken breasts into small bite-size pieces. Once your seasoning has melted down, add your chicken to the pan. Continue to stir until chicken is cooked through. Add snap peas to pan. Stir into chicken mix. Cover with lid and cook for 5 minutes. Meal is ready to serve once beans are cooked to your liking. (I like mine crunchy, so 5 minutes was good for me).

Voila. You’ve got yourself a meal. Enjoy!
