A Summer Chopped Salad


We’ve made it to June and that means it’s time for some lighter recipes. I threw this salad together last week and it came out perfectly. So many of our favorite ingredients!

Avocado. Check.

Bacon. Check.

Feta. Check.

What more could you want?

Oh, I don’t know. More bacon?

A Summer Chopped Salad

Romain Lettuce

  • Green Leaf Lettuce

  • 5 slices of bacon

  • 1 Avocado

  • 1 small can of sweet corn (not pictured, oops)

  • 1/2 C. Feta

  • Grape Tomatoes

  • 1 Apple (choose your favorite)

  • Tortilla Strips (not pictured, oops)

Lemon Lime Salad Dressing

  • Juice from 1/2 lime

  • Juice form 1/2 lemon

  • Olive Oil

  • Salt and Pepper

Start by getting all of you ingredients ready for the salad. It’s called a “chop” salad, so make sure you chop all the ingredients into small pieces. Chop lettuce, tomatoes, and apple into small bites. Toss into large mixing bowl. Drain can of sweet corn and toss into mixing bowl.

Next, cook bacon, either by skillet or microwave. Once your bacon is cooked and crispy, chop into small pieces. Toss into mixing bowl.

Toss in feta and tortilla chips.

Cut avocado into small pieces and set aside. (Don’t toss into large mixing bowl)

To make your dressing squeeze juice from half a lime and half a lemon into a small bowl. Pour in 1/4 cup olive oil and a dash of salt and pepper. Whisk until well combined.

To assemble salad, give salad ingredients a good toss. Make sure all salad ingredients are mixed in well (except avocado – those should stay set aside until the end). Drizzle salad dressing on top of salad. Give it another good toss. To serve, place salad into large bowl. Sprinkle avocado on top.
