Classed Up Vanilla Cake Out of a Box

What better way to celebrate moving to Des Moines, than with a great mexican dinner with girlfriends and late night cake baking. After a great dinner out at Dos Rios, we decided to head back home, veg out and eat some cake. Hey – we do what we want!

Here we are downtown at Dos Rios for dinner.

On to this delicious cake. What’s the best part of this cake? It’s made out of a box! But it’s not just any ol box mix – it’s got special things added to it to make it extra special… Here’s what you’ll need (my pseudo sister, Erin’s recipe):

Classed Up Boxed Vanilla Cake

  • Vanilla Boxed Cake

  • Vanilla Pudding Package

  • 1/4 C. Water

  • 1/3 C. Oil

  • 1 C. Sour Cream

  • 4 Egg Whites

  • Favorite Chocolate Canned Frosting

Start by mixing together the box mix (we used the generic Hy-Vee brand – which makes it even better…) and the vanilla pudding package. Add in your water and oil. Next, add in one cup of sour cream and 4 egg whites.

Spray your pan on all sides with Baker’s Joy oil. This is great for baking pans when you want your baked good to easily be removed from the pan. Pour your batter into your pan. Bake your cake according to the box and size of pan.

If your cake rises above the pan, feel free to cut off the top to make the top of the cake even. The top of the cake, has a crunchy slash doughy feel, and it is DELICIOUS! Eat these pieces as a little appetizer while waiting for the cake to cool a little bit.

If you’re impatient, and can’t wait for the cake to cool – that’s ok. Neither could we. We added the chocolate frosting (out of a can of course) right away.

It’s gooey.

It’s melty.

It’s oh so good.

Serve with milk. And a side of this – (best movie ever).
