Loaded Mashed Potatoes

What a beautiful day today! 80 degrees and sunny. In honor of this great summer weather, we decided to get the grill out. Oh, how I’ve missed it!

I decided to make loaded mashed potatoes and green beans for the side. I got some ideas from The Pioneer Woman’s blog and added my own take.

Loaded Mashed Potatoes

  • 4 Tbsp butter

  • 2 Tbsp milk (add more if you want it creamier)

  • Sprinkle of bacon bits

  • 3 dashes of pepper

  • 1/4 tsp Lawry’s seasoned salt

  • 1/4 Cup sour cream

  • 1/4 Cup shredded cheese

Peel two potatoes and cut them into little pieces. I boiled them in hot water seasoned with a pinch of sea salt. Give the potatoes the “fork” check to make sure they’re done. When they’re cooked through, the fork should easily slide into the potatoes with no resistance, and the potatoes should almost—but not totally—fall apart. Add the butter, milk, bacon bits, sour cream, shredded cheese and seasonings. Feel free to be creative with the seasonings. I added stuff until it looked and tasted good.
