Cheeseburger Flatbreads Melts

What a weekend! I feel like it’s been forever since I last posted, and not without good reason. I ended up getting food poisoning this past Saturday and was down for the count. It couldn’t have happened at a worse time – I had a huge event for work all day Sunday. I was planning on baking some amazing cookies to share with you, but needless to say, that will have to wait for another day…

Leading up to this evening – I haven’t had a full meal in a couple of days, so you could say that I was hungry! I felt pretty guiltless when I found this recipe on Kevin & Amanda’s blog. I thought it was the perfect meal to bring me back to health.

It’s a pretty rich meal, so I tried to balance it with a big ol’ salad on the side.

Cheeseburger Flatbread Melts

(Inspired from here)

  • 1/2 lb lean ground beef, browned and drained (I used a whole pound because I bought it packaged and didn’t want it to go to waste)

  • 1/4 Cup water

  • 1/2 Tbsp apple cider vinegar

  • 1 package dry onion soup mix

  • 1/4 Cup ketchup

  • 1 Tbsp mustard (I used the smallest squirt because I largely dislike mustard)

  • 2 Tbsp canola or vegetable oil

  • 11 oz thin crust pizza dough

  • 1 Cup shredded cheddar cheese

Brown and drain ground beef. Make sure to drain all the grease! Add water, vinegar, onion soup mix, ketchup, mustard and garlic. Stir to combine and simmer over low heat. Mix it all up!

Meanwhile, heat 2 Tbsp canola oil over medium heat in a large, heavy bottomed skillet. Divide the pizza dough into six equal portions and roll into a round, tortilla-like shape. Fry the dough for one minute on each side or until golden brown and bubbly. Remove to a paper towel and drain. Make sure to soak up all the grease!

Top with beef mixture and shredded cheese.

Enjoy!
