Pregnancy Sweet Tooth

Man o man – this pregnancy has given me a major sweet tooth. I used to be a lot of crunch and salty and now I’m all, “cookie – get in my belly”.

I’m not ashamed to admit my husband is out of town and I made myself a “little” pan of brownies this weekend. Don’t worry – there is still 2/3 left to take to work tomorrow.

YUMM. So so good. These are perfectly gooey and they melt in your mouth! Add a scoop of ice cream and you’re good to go.

Fudgy Melty Brownies (Recipe inspired from here)

  • 1/2 C butter, room temperature

  • 1 C sugar

  • 1 Tsp vanilla extract

  • 2 Eggs

  • 1/2 C all purpose flour

  • 1/2 C cocoa powder

  • 1/4 Tsp baking soda

  • 1/4 Tsp salt

  • 2 C semi-sweet chocolate chips

Preheat oven to 350 degrees. Line 9×9 baking pan with baking spray.

Beat together butter, sugar, and vanilla in stand mixer bowl. Add eggs one at a time. Make sure to mix well between each addition.

Meanwhile, stir together the flower, cocoa powder, baking soda and salt. Gradually add the dry ingredients to the butter mixture.

Mix in the chocolate chips with spatula. Once the batter forms, scrape into the prepared dish and spread evenly. Bake for 25-30 minutes, until brownies begin to pull away from the side of the pan.
