I was out to dinner with a girlfriend a couple months ago. We went to the Firebirds Wood Fired Grill and I loved their Colorado Chicken Salad. It had some of my favorite salad ingredients including cranberries, Granny Smith apples and spiced pecans. I thought it would be fun to recreate it at home.
As we head into fall, this is the perfect transition salad. Candied pecans. Cranberries. Apples. Yumm!
Fall Grilled Chicken Salad
2 chicken breasts
Granny Smith Apples
1/2 Lemon Juice
1/4 C. Light Olive Oil
Pinch of Salt and Pepper
Fire up your grill. Season chicken with greek seasoning (we put this on everything). Grill chicken until cooked.
To make your dressing, whisk together the lemon juice, 1/4 c. oil until smooth. Stir in salt and pepper. Set aside.
Prepare salad with lettuce, sliced apples, feta cheese, cranberries and pecans. Top with grilled chicken and dressing.
