Grandma K's Hamburger Soup Recipe

Fall is here.

 

The air is crisp.

 

My sweaters have been pulled out from underneath the bed.

 

I can officially wear scarves without being made fun of by my husband.

 

And most importantly, it’s officially soup weather.

 

I decided to celebrate this by making my favorite family soup recipe, “Grandma K’s Hamburger Soup”.  It’s hearty, filled with vegetables, meat and potatoes.  Make sure you have plenty of room in your freezer, because this recipe makes A TON! We are officially stocked up for winter.

 

So, without much further ado, put on your favorite pair of fall sweatpants, cuddle up with your favorite person and enjoy a big bowl of this soup!

 

 

Grandma K's Hamburger Soup

  • 2 lb. ground beef

  • 2 cup diced potatoes

  • 2 qt. hot water

  • 1 cup diced celery

  • 1 cup sliced carrots

  • 1/2 head chopped cabbage

  • 2 onions, diced

  • 1 large can tomatoes, chopped

  • 1 sm. can whole kernel corn

  • 1/2 tsp pepper

  • 4 tsp salt

  • 1/2 c. rice or barley

You’ll need to start  by digging out your REALLY BIG pan.

 

Brown ground beef.  Once it is browned, drain fat and add water.  Allow to come to full rolling boil.

While your meat is browning, prepare your vegetables.  Get them peeled, washed, skinned, etc. Then, get busy dicing into small, bite-size pieces.  

 

Once your water has come to a boil, add your vegetables.  Boil slowly (simmer) until vegetables are tender.  Then add your rice or barley.  Continue cooking until rice/barley are done.  I usually check how my vegetables are doing after 30 minutes.  Depending on how they are doing, I let simmer for an additional 15 minutes before I add the barley.  Then I cook for an additional 20-40 minutes.  I went a little crazy with the vegetables so it took a little longer to cook through. 

 

Don’t forget your spices….  Stir it all up… Now, let it simmah down nah. Once you feel the vegetables are cooked through, add your barley or rice.  I used barley for this recipe.

 

And just like before, let it Simma Down Now!

 

Once you feel your soup is cooked through, it’s time to let it cool.  This would be a great time to go change into your favorite fall sweatpants, if you haven’t yet done so… I like to serve my soup in big coffee mugs. YUMM.

 

I love my crackers with a little soup…. I mean I love my soup with a couple of crackers…
