Tim turned the big 3-0 a couple of weeks ago. To start the day off right, I made him a big birthday breakfast. The birthday boy wanted pancakes and eggs, so that’s what he got.
These homemade pancakes are a great way to start off the day.

Birthday Pancakes (Recipe makes 15 small pancakes)
2 C. flour
1/3 C. sugar
1 Tsp. salt
1 1/2 Tbsp. baking powder
2 C. milk
2 Tbsp. butter (room temp)
2 Tsp. vanilla
Mix all dry ingredients together, then add egg, milk, butter, and vanilla. Whisk until ingredients are well incorporated. Pour pancake mix into liquid measuring cup for easy distribution. Heat frying pan to medium and pour pancake batter on a lightly greased pan. Flip when bubbles appear on the edges of cake. Once flipped, it only takes a minute or two to finish cooking. Serve right away.
